Description

A comforting casserole that combines ground beef, Cool Ranch seasoning, black beans, corn, and layers of melted cheese, perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 1 packet Cool Ranch seasoning mix
  • 2 cups diced tomatoes
  • 1 can black beans, rinsed and drained
  • 2 cups corn, frozen or canned
  • 2 cups shredded cheddar cheese
  • 1 large onion, diced
  • 3 cups tortilla chips, crushed

Instructions

  1. Heat a splash of oil in a skillet over medium heat. Brown the ground beef until cooked through, stirring occasionally.
  2. Add the diced onion and cook until soft and translucent, about 5 minutes.
  3. Stir in the Cool Ranch seasoning mix until well-coated.
  4. Transfer the mixture to your Crock-Pot and spread evenly.
  5. Pour in the diced tomatoes, black beans, corn, and half of the cheddar cheese. Mix everything well.
  6. Set your Crock-Pot to cook on low for 6-8 hours or on high for 3-4 hours.
  7. In the final 30 minutes, sprinkle the remaining cheese and crushed tortilla chips over the top.
  8. Serve hot and enjoy!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. This dish freezes well for longer storage.
