A comforting casserole that combines ground beef, Cool Ranch seasoning, black beans, corn, and layers of melted cheese, perfect for family dinners.

- 1 pound ground beef
- 1 packet Cool Ranch seasoning mix
- 2 cups diced tomatoes
- 1 can black beans, rinsed and drained
- 2 cups corn, frozen or canned
- 2 cups shredded cheddar cheese
- 1 large onion, diced
- 3 cups tortilla chips, crushed
Instructions
- Heat a splash of oil in a skillet over medium heat. Brown the ground beef until cooked through, stirring occasionally.
- Add the diced onion and cook until soft and translucent, about 5 minutes.
- Stir in the Cool Ranch seasoning mix until well-coated.
- Transfer the mixture to your Crock-Pot and spread evenly.
- Pour in the diced tomatoes, black beans, corn, and half of the cheddar cheese. Mix everything well.
- Set your Crock-Pot to cook on low for 6-8 hours or on high for 3-4 hours.
- In the final 30 minutes, sprinkle the remaining cheese and crushed tortilla chips over the top.
- Serve hot and enjoy!
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. This dish freezes well for longer storage.
