Instructions
- Preheat your oven to 425°F (220°C).
- Peel and trim the rainbow carrots, placing them in a large bowl.
- Drizzle the olive oil over the carrots, then sprinkle with salt, black pepper, rosemary, thyme, and parsley.
- Toss until the carrots are well coated with the oil and herbs.
- Spread the carrots out in a single layer on a prepared baking sheet.
