Description

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare the salmon: Start by seasoning the salmon fillets generously with salt and pepper.
  2. Sear the salmon: Heat olive oil in a skillet over medium-high heat. Once hot, add the salmon fillets, cooking for about 4-5 minutes on each side until they develop a lovely golden crust and are cooked through. Remove from the skillet and set aside.
  3. Sauté the garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it!
  4. Add the sun-dried tomatoes: Stir in the chopped sun-dried tomatoes, allowing them to warm through for an additional minute.
  5. Create the sauce: Pour in the heavy cream and add the grated parmesan cheese, stirring until everything is well combined and heated through.
  6. Return the salmon: Gently place the salmon fillets back into the skillet, spooning the creamy sauce over them to ensure they are generously coated.
  7. Garnish & serve: Top with fresh basil or parsley for that final touch and serve immediately.

Notes

For a lighter version, swap heavy cream with coconut milk. Can also substitute salmon with chicken breast or shrimp.
