Description
A delightful union of bright flavors with comforting textures featuring tender chicken in a lemon caper sauce over pasta.
Ingredients
Scale
- 8 oz pasta (spaghetti, fettuccine, or penne)
- 1 lb chicken breast, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup capers
- 1/4 cup lemon juice
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- Heat the skillet: In a large skillet, pour in the olive oil and heat over medium heat until shimmering.
- Cook the chicken: Add the sliced chicken, season with salt and pepper, and sauté until golden brown and cooked through, about 5-7 minutes.
- Add garlic: Stir in the minced garlic and let it sizzle for about a minute.
- Simmer the sauce: Pour in the chicken broth, capers, and lemon juice; bring to a gentle simmer.
- Reduce the sauce: Allow it to reduce for about 5 minutes, thickening slightly.
- Toss the pasta: Add the cooked pasta to the skillet and toss together.
- Finish with parsley: Stir in the chopped parsley, taste, and adjust seasoning if necessary. Serve immediately.
Notes
Season the pasta water for better flavor. For meal prep, make the chicken and sauce in advance, then combine with freshly cooked pasta.
