  • 1/3 cup melted butter
  • 2 cups cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1/2 cup chopped pistachios
  • 1 cup cherries, pitted
  • 1/4 cup cherry syrup
  • 1/4 cup white chocolate, melted
  • Extra cherries and pistachios for garnish

Instructions

  1. Combine the digestive biscuit crumbs with melted butter until fully coated.
  2. Press the mixture firmly into a springform pan to form the crust. Chill for 20 minutes to set.
  3. Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Fold in the whipped cream, creating an airy texture.
  5. Stir in the chopped pistachios and half of the pitted cherries.
  6. Pour the filling over the chilled crust, smoothing the top with a spatula.
  7. Drizzle cherry syrup on top and swirl with a knife.
  8. Refrigerate for at least 240 minutes to set.
  9. Pipe whipped cream on top and garnish with fresh cherries and pistachios.
  10. Finish with a drizzle of melted white chocolate.
