- 1 cup cherries, pitted
- 1/4 cup cherry syrup
- 1/4 cup white chocolate, melted
- Extra cherries and pistachios for garnish
Instructions
- Combine the digestive biscuit crumbs with melted butter until fully coated.
- Press the mixture firmly into a springform pan to form the crust. Chill for 20 minutes to set.
- Beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Fold in the whipped cream, creating an airy texture.
- Stir in the chopped pistachios and half of the pitted cherries.
- Pour the filling over the chilled crust, smoothing the top with a spatula.
- Drizzle cherry syrup on top and swirl with a knife.
- Refrigerate for at least 240 minutes to set.
- Pipe whipped cream on top and garnish with fresh cherries and pistachios.
- Finish with a drizzle of melted white chocolate.
