Ingredients

Scale
  • For the Topping:
    • 1/2 cup unsalted butter, melted
    • 1 cup brown sugar, packed
    • 1 can (20 oz) pineapple slices, drained
    • 1 jar (10 oz) maraschino cherries, drained
  • For the Cake:
    • 1 1/2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 1/2 cup milk
    • 1 1/2 teaspoons baking powder
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a 9-inch round cake pan, pour the melted butter and sprinkle the brown sugar evenly over it.
  3. Arrange the pineapple slices on top of the brown sugar, placing a cherry in the center of each pineapple slice.
  4. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then stir in the milk and vanilla extract.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Pour the cake batter over the pineapple and cherries in the pan, spreading it evenly.
  9. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  10. Allow the cake to cool for 10 minutes before inverting it onto a serving plate.
