Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake cools, prepare the mousse: In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  7. In a saucepan, heat the cherry puree over low heat and stir in the bloomed gelatin until dissolved. Remove from heat and let cool slightly.
