- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- For the Topping:
- 1 cup fresh cherries, pitted and halved
- 1/4 cup sliced almonds
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake cools, prepare the mousse: In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
- In a saucepan, heat the cherry puree over low heat and stir in the bloomed gelatin until dissolved. Remove from heat and let cool slightly.
- In a separate bowl, whip the heavy cream with powdered sugar and almond extract until soft peaks form.
- Gently fold the cherry mixture into the whipped cream until fully combined.
- Once the cake is completely cool, spread the mousse over the top and refrigerate for at least 4 hours to set.
- Before serving, top with fresh cherries and sliced almonds.
