- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2 cups cooked rice
- 1 can diced tomatoes with green chilies
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F, and grease your 9×13-inch baking dish.
- Brown the ground beef in a large skillet over medium heat with the diced onion for about 5-7 minutes.
- Drain any excess grease from the meat mixture, then add minced garlic and taco seasoning and cook for an additional minute.
- Add the diced tomatoes, black beans, corn, salsa, and cooked rice. Mix everything together until well combined.
- Pour the mixture into the greased baking dish, smoothing it into an even layer.
- Sprinkle cheddar and Monterey Jack cheeses generously on top.
- Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.

For a vegetarian option, swap the ground beef for a mix of sautéed mushrooms and additional beans.
