Description

A comforting casserole featuring creamy layers of yellow squash enveloped in cheese, topped with crispy buttery crackers.


Ingredients

  • 8 yellow summer squash, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 1 large egg, lightly beaten
  • 1 cup low-fat sour cream
  • 1 sleeve of buttery round crackers, crushed
  • 2 cups shredded sharp Cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your casserole dish with cooking spray or oil.
  3. Steam sliced squash and onion for 10–15 minutes until tender.
  4. Whisk together the beaten egg and sour cream until smooth in the casserole dish.
  5. Fold in the steamed vegetables, 2/3 of the crushed crackers, and 2/3 of the shredded cheese.
  6. Sprinkle the remaining crackers and cheese over the mixture.
  7. Bake for 30 minutes until golden brown and bubbly.
  8. Cool slightly before serving.

Notes

You can prepare the casserole a day in advance. To reheat, add 15 minutes to the baking time if refrigerated.
