A comforting casserole featuring creamy layers of yellow squash enveloped in cheese, topped with crispy buttery crackers.

- 8 yellow summer squash, thinly sliced
- 1 small yellow onion, thinly sliced
- 1 large egg, lightly beaten
- 1 cup low-fat sour cream
- 1 sleeve of buttery round crackers, crushed
- 2 cups shredded sharp Cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Grease your casserole dish with cooking spray or oil.
- Steam sliced squash and onion for 10–15 minutes until tender.
- Whisk together the beaten egg and sour cream until smooth in the casserole dish.
- Fold in the steamed vegetables, 2/3 of the crushed crackers, and 2/3 of the shredded cheese.
- Sprinkle the remaining crackers and cheese over the mixture.
- Bake for 30 minutes until golden brown and bubbly.
- Cool slightly before serving.
Notes
You can prepare the casserole a day in advance. To reheat, add 15 minutes to the baking time if refrigerated.
