- 4 large bell peppers, halved and seeded

- 1/2 cup cherry tomatoes, halved
- 1 1/2 cups mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- Salt & black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and minced garlic, sautéing until fragrant and golden, about 2-3 minutes.
- Incorporate the chosen ground meat into the skillet, cooking until browned.
- Stir in the cooked rice, cherry tomatoes, Italian seasoning, and season with salt and pepper.
- Arrange the halved bell peppers cut side up in the baking dish.
- Fill each half with the savory filling and pack it gently.
- Pour the shredded mozzarella cheese and grated Parmesan generously over the stuffed peppers.
- Bake for 25–30 minutes, until the peppers are tender and the cheese is bubbly and golden brown.
- Garnish with fresh parsley before serving.
