Description

This dish features juicy salmon fillets stuffed with a creamy cheese and spinach filling, topped with a sweet and savory brown sugar bourbon glaze.


Ingredients

  • 4 salmon fillets, skin removed
  • 8 oz cream cheese, softened
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1/3 cup brown sugar
  • 1/4 cup bourbon
  • 2 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 tbsp butter, melted
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Prepare the baking dish by greasing a 9×13-inch baking dish.
  3. Mix the filling: combine cream cheese, spinach, mozzarella, Parmesan, garlic, onion powder, paprika, salt, and pepper.
  4. Create pockets in the salmon fillets with a sharp knife.
  5. Stuff each salmon fillet with the filling mixture.
  6. Place the stuffed fillets in the prepared baking dish.
  7. Prepare the glaze: combine brown sugar, bourbon, Dijon mustard, soy sauce, and melted butter in a saucepan over medium heat.
  8. Glaze the salmon with the brown sugar bourbon mixture.
  9. Bake for 25 to 30 minutes, until the salmon flakes easily.
  10. Broil for 2 to 3 minutes, if desired, to add color.
  11. Let rest before serving, garnishing with parsley if desired.

Notes

For extra flavor, feel free to customize with sun-dried tomatoes or crushed red pepper flakes.
