- 4 salmon fillets, skin removed
- 8 oz cream cheese, softened
- 1 cup fresh spinach, finely chopped
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1/3 cup brown sugar
- 1/4 cup bourbon
- 2 tbsp Dijon mustard
- 1 tbsp soy sauce
- 1 tbsp butter, melted
- Fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 375°F.
- Prepare the baking dish by greasing a 9×13-inch baking dish.
- Mix the filling: combine cream cheese, spinach, mozzarella, Parmesan, garlic, onion powder, paprika, salt, and pepper.
- Create pockets in the salmon fillets with a sharp knife.
- Stuff each salmon fillet with the filling mixture.
- Place the stuffed fillets in the prepared baking dish.
- Prepare the glaze: combine brown sugar, bourbon, Dijon mustard, soy sauce, and melted butter in a saucepan over medium heat.
- Glaze the salmon with the brown sugar bourbon mixture.
- Bake for 25 to 30 minutes, until the salmon flakes easily.
- Broil for 2 to 3 minutes, if desired, to add color.
- Let rest before serving, garnishing with parsley if desired.

For extra flavor, feel free to customize with sun-dried tomatoes or crushed red pepper flakes.
