Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a bundt pan generously.
- Cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
- Add the eggs one at a time, mixing well after each addition.
- Sift together the all-purpose flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and vanilla extract.
- Fold in the mashed bananas and crushed vanilla wafers until evenly distributed.
- Pour the batter into the prepared bundt pan.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake cools, whisk together the instant vanilla pudding mix, cold milk, and sweetened condensed milk until smooth.
- Once cooled, drizzle the pudding glaze over the cake and garnish with sliced bananas and crushed wafers.
Notes
For a lighter version, substitute butter with coconut oil or unsweetened applesauce. You can also replace eggs with flaxseed meal mixture for a vegan option.
