Description

A delightful dessert combining soft cake and creamy banana pudding, elegantly rolled and topped with whipped cream and vanilla wafers.


Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons milk
  • 1 box instant banana pudding mix
  • 1 1/2 cups cold milk
  • 1 cup whipped topping
  • 2 bananas, sliced
  • Powdered sugar (for topping)
  • Crushed vanilla wafers (for topping)
  • Extra whipped topping (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your jelly roll pan.
  2. Beat the eggs and granulated sugar together until thick and pale, then stir in the vanilla extract.
  3. Sift together the flour, baking powder, and salt; fold into the egg mixture.
  4. Pour the batter into the pan, then bake for 12-15 minutes until golden.
  5. Whisk together the banana pudding mix and cold milk until thick, then fold in whipped topping and bananas.
  6. Turn the baked cake onto a powdered sugar dusted towel, remove parchment, and roll tightly in the towel.
  7. Unroll the cake, spread filling evenly, then roll it back up, seam-side down.
  8. Dust with powdered sugar, top with crushed waifers and additional whipped topping.
  9. Serve in slices and enjoy!
