- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons milk
- 1 box instant banana pudding mix
- 1 1/2 cups cold milk
- 1 cup whipped topping
- 2 bananas, sliced
- Powdered sugar (for topping)
- Crushed vanilla wafers (for topping)
- Extra whipped topping (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your jelly roll pan.
- Beat the eggs and granulated sugar together until thick and pale, then stir in the vanilla extract.
- Sift together the flour, baking powder, and salt; fold into the egg mixture.
- Pour the batter into the pan, then bake for 12-15 minutes until golden.
- Whisk together the banana pudding mix and cold milk until thick, then fold in whipped topping and bananas.
- Turn the baked cake onto a powdered sugar dusted towel, remove parchment, and roll tightly in the towel.
- Unroll the cake, spread filling evenly, then roll it back up, seam-side down.
- Dust with powdered sugar, top with crushed waifers and additional whipped topping.
- Serve in slices and enjoy!
