- 4 bone-in, skin-on chicken thighs
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- Zest of 1 lemon
- Salt and pepper to taste
Instructions
- Prep the Marinade: In a mixing bowl, blend olive oil, minced garlic, fresh herbs, lemon zest, salt, and pepper.
- Marinate the Chicken: Place the chicken pieces in a resealable bag, pour in the marinade, seal the bag, and massage to coat. Marinate in the fridge for at least 30 minutes.
- Preheat the Skillet: Heat a cast iron skillet over medium-high heat until hot.
- Sear the Chicken: Remove chicken from marinade, let excess drip, and place skin-side down in skillet, cooking for 5-7 minutes until golden brown.
- Flip and Bake: Turn the chicken over and transfer the skillet to a preheated oven at 400°F (200°C). Bake for 20-25 minutes until internal temperature reaches 165°F (75°C).
- Rest Before Serving: Let chicken rest for 5 minutes before serving.
Notes
For deeper flavors, consider adding a splash of white wine to the marinade.
