  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prep the Marinade: In a mixing bowl, blend olive oil, minced garlic, fresh herbs, lemon zest, salt, and pepper.
  2. Marinate the Chicken: Place the chicken pieces in a resealable bag, pour in the marinade, seal the bag, and massage to coat. Marinate in the fridge for at least 30 minutes.
  3. Preheat the Skillet: Heat a cast iron skillet over medium-high heat until hot.
  4. Sear the Chicken: Remove chicken from marinade, let excess drip, and place skin-side down in skillet, cooking for 5-7 minutes until golden brown.
  5. Flip and Bake: Turn the chicken over and transfer the skillet to a preheated oven at 400°F (200°C). Bake for 20-25 minutes until internal temperature reaches 165°F (75°C).
  6. Rest Before Serving: Let chicken rest for 5 minutes before serving.

Notes

For deeper flavors, consider adding a splash of white wine to the marinade.
