			- 2 medium zucchinis, grated
 - 1 cup sweet corn, canned or frozen
 - 1/2 cup all-purpose flour
 - 1/2 cup grated cheese (cheddar or mozzarella)
 - 2 large eggs
 - 1/4 cup green onions, chopped
 - 1 teaspoon garlic powder
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - Oil for frying
 
Instructions
- In a large bowl, combine the grated zucchini, sweet corn, and green onions.
 - Add the eggs, flour, cheese, garlic powder, salt, and pepper to the bowl and mix until well combined.
 - Heat oil in a frying pan over medium heat.
 - Drop spoonfuls of the mixture into the hot oil and flatten slightly.
 - Fry for about 3-4 minutes on each side or until golden brown.
 - Remove from the pan and place on paper towels to drain excess oil.
 - Serve warm with your favorite dipping sauce.
