  • 2 ham hocks
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Soak the white beans: Start this process the night before by placing the beans in a large bowl and covering them with plenty of water. After soaking overnight, drain and set them aside.
  2. Prepare the broth: In a large stockpot, combine the ham hocks with your broth. Bring it to a gentle simmer, allowing the flavors to meld beautifully.
  3. Add the vegetables: Stir in the soaked beans, chopped onion, carrots, celery, garlic, bay leaves, and thyme.
  4. Simmer: Allow the soup to simmer gently for about 90 to 120 minutes, or until the beans are tender and the ham hocks fall apart.
  5. Shred the meat: Once tender, remove the hocks, cool slightly, shred the meat and return it to the pot while discarding bones.
  6. Season: Add salt and pepper generously to taste.
  7. Serve hot: Ladle the soup into bowls and garnish with freshly chopped parsley.

Notes
