 - 1 head of garlic
 - 2 tablespoons olive oil

Instructions
- Preheat the oven to 400°F (200°C).
 - Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil.
 - Roast the garlic in the oven for about 30-35 minutes until soft.
 - In a food processor, combine the feta cheese, roasted garlic (squeezed out of the skins), olive oil, lemon juice, and black pepper.
 - Blend until smooth and creamy.
 - Transfer to a serving bowl and garnish with fresh herbs if desired.
 - Serve with bread, crackers, or fresh vegetables.
 
Notes
- For a creamier texture, add a little water or more olive oil while blending.
 - This dip can be made ahead of time and stored in the refrigerator for up to 3 days.
