- 1 head of cauliflower, chopped
- 1 cup smoky BBQ sauce
- 8 small tortillas
- 2 cups slaw mix (cabbage and carrots)
- Fresh toppings: cilantro, avocado, and lime
- Olive oil, salt, and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the cauliflower: In a large mixing bowl, toss the chopped cauliflower with olive oil, salt, and pepper.
- Roast the cauliflower on a baking sheet for about 25-30 minutes, until golden brown and crispy.
- Sauce it up: After 20 minutes, drizzle BBQ sauce over the cauliflower and roast for another 5-10 minutes.
- Warm the tortillas on a skillet or in the microwave until soft.
- Assemble each taco with roasted cauliflower, slaw, cilantro, avocado, and lime juice.
- Serve warm and enjoy!
Notes
You can roast the cauliflower and prepare the slaw a day in advance. Store separately until ready to assemble.
