Description

Delicious tacos made with roasted cauliflower and smoky BBQ sauce, topped with vibrant slaw and fresh avocado.


Ingredients

  • 1 head of cauliflower, chopped
  • 1 cup smoky BBQ sauce
  • 8 small tortillas
  • 2 cups slaw mix (cabbage and carrots)
  • Fresh toppings: cilantro, avocado, and lime
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the cauliflower: In a large mixing bowl, toss the chopped cauliflower with olive oil, salt, and pepper.
  3. Roast the cauliflower on a baking sheet for about 25-30 minutes, until golden brown and crispy.
  4. Sauce it up: After 20 minutes, drizzle BBQ sauce over the cauliflower and roast for another 5-10 minutes.
  5. Warm the tortillas on a skillet or in the microwave until soft.
  6. Assemble each taco with roasted cauliflower, slaw, cilantro, avocado, and lime juice.
  7. Serve warm and enjoy!

Notes

You can roast the cauliflower and prepare the slaw a day in advance. Store separately until ready to assemble.
