Ingredients

- 1 large tortilla
- 1/2 cup black beans, cooked
- 1/2 cup diced bell peppers
- 1/2 cup diced tomatoes
- 1/4 cup corn
- 1/4 avocado, sliced
- 1/4 cup nutritional yeast
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a skillet, sauté the bell peppers and tomatoes until soft.
- Add the black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 5 minutes.
- Warm the tortilla in a separate pan.
- Place the bean mixture in the center of the tortilla.
- Add avocado slices and nutritional yeast on top.
- Fold the sides of the tortilla over the filling and roll it up tightly.
- Serve warm and enjoy!

- Feel free to add other vegetables like spinach or mushrooms.
- Can be served with salsa or hot sauce for extra flavor.
