Ingredients

  • 1/2 cup black beans, cooked
  • 1/2 cup diced bell peppers
  • 1/2 cup diced tomatoes
  • 1/4 cup corn
  • 1/4 avocado, sliced
  • 1/4 cup nutritional yeast
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a skillet, sauté the bell peppers and tomatoes until soft.
  2. Add the black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 5 minutes.
  3. Warm the tortilla in a separate pan.
  4. Place the bean mixture in the center of the tortilla.
  5. Add avocado slices and nutritional yeast on top.
  6. Fold the sides of the tortilla over the filling and roll it up tightly.
  7. Serve warm and enjoy!
