Description

A refreshing Mediterranean-inspired chicken salad with tender rotisserie chicken and creamy tzatziki.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Lettuce leaves for serving

Instructions

  1. In a large mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and season with salt and pepper. Stir until well mixed.
  2. Gently fold in the shredded rotisserie chicken until evenly coated in the tzatziki sauce.
  3. Serve the salad on a bed of crisp lettuce leaves.
  4. Optional: Drizzle with olive oil or sprinkle paprika on top before serving.

Notes

Make the tzatziki sauce a day in advance for better flavor. Store leftovers in an airtight container in the fridge for up to three days.
