A warm and hearty Turkey & Pumpkin Chili Casserole perfect for fall, combining lean turkey, pumpkin puree, and a blend of spices for a comforting dish.

			- 1 lb ground turkey
 - 1 can (15 oz) pumpkin puree
 - 1 can (15 oz) black beans, drained and rinsed
 - 1 can (15 oz) diced tomatoes
 - 1 cup corn kernels
 - 1 onion, chopped
 - 2 cloves garlic, minced
 - 2 cups chicken broth
 - 2 tsp chili powder
 - 1 tsp cumin
 - Salt and pepper to taste
 - 1 cup shredded cheese (optional)
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a large skillet, cook the ground turkey over medium heat until browned.
 - Add the chopped onion and minced garlic, cooking until the onion is translucent.
 - Stir in the pumpkin puree, black beans, diced tomatoes, corn, chicken broth, chili powder, cumin, salt, and pepper.
 - Bring the mixture to a simmer and let it cook for about 10 minutes.
 - Transfer the chili mixture to a casserole dish and top with shredded cheese if desired.
 - Bake in the preheated oven for 25-30 minutes until heated through and cheese is bubbly.
 - Let it cool for a few minutes before serving.
 
Notes
- Feel free to add more vegetables like bell peppers or zucchini for extra nutrition.
 - This dish can be made ahead of time and reheated.
 - For a spicier version, add jalapeños or cayenne pepper.
