A refreshing and delicious tortellini pasta salad perfect for summer gatherings.
Ingredients

			- 12 oz cheese tortellini
 - 1 cup cherry tomatoes, halved
 - 1 cup cucumber, diced
 - 1/2 cup red onion, finely chopped
 - 1/2 cup black olives, sliced
 - 1/4 cup fresh basil, chopped
 - 1/4 cup olive oil
 - 2 tbsp red wine vinegar
 - Salt and pepper to taste
 
Instructions
- Cook the tortellini according to package instructions. Drain and let cool.
 - In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red onion, black olives, and basil.
 - In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
 - Pour the dressing over the salad and toss to combine.
 - Chill in the refrigerator for at least 30 minutes before serving.
 
Notes
- Feel free to add other vegetables like bell peppers or spinach.
 - This salad can be made a day in advance for better flavor.
 - Adjust the dressing ingredients according to your taste preference.
