Description
A comforting and delicious combination of creamy tomato soup paired with crispy grilled cheese sandwiches.
Ingredients

			- 2 cups of canned crushed tomatoes
 - 1 cup of vegetable broth
 - 1 medium onion, chopped
 - 2 cloves of garlic, minced
 - 1 teaspoon of sugar
 - 1 teaspoon of dried basil
 - Salt and pepper to taste
 - 1 cup of heavy cream
 - 4 slices of bread
 - 4 slices of cheese (cheddar or your choice)
 - Butter for grilling
 
Instructions
- In a pot, sauté the chopped onion and minced garlic until translucent.
 - Add the crushed tomatoes, vegetable broth, sugar, dried basil, salt, and pepper. Bring to a simmer.
 - Let the soup simmer for about 20 minutes, stirring occasionally.
 - Stir in the heavy cream and heat through.
 - Meanwhile, butter one side of each slice of bread and place cheese between two slices, buttered side out.
 - Grill the sandwich in a skillet over medium heat until golden brown on both sides and the cheese is melted.
 - Serve the hot tomato soup with the grilled cheese sandwiches cut in half.
 
Notes
- For a spicier version, add red pepper flakes to the soup.
 - Use fresh basil for a more vibrant flavor.
 - Pair with a side salad for a complete meal.
