A comforting and delicious combination of creamy tomato soup paired with crispy grilled cheese sandwiches.


Ingredients

  • 2 cups of canned crushed tomatoes
  • 1 cup of vegetable broth
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of sugar
  • 1 teaspoon of dried basil
  • Salt and pepper to taste
  • 1 cup of heavy cream
  • 4 slices of bread
  • 4 slices of cheese (cheddar or your choice)
  • Butter for grilling

Instructions

  1. In a pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the crushed tomatoes, vegetable broth, sugar, dried basil, salt, and pepper. Bring to a simmer.
  3. Let the soup simmer for about 20 minutes, stirring occasionally.
  4. Stir in the heavy cream and heat through.
  5. Meanwhile, butter one side of each slice of bread and place cheese between two slices, buttered side out.
  6. Grill the sandwich in a skillet over medium heat until golden brown on both sides and the cheese is melted.
  7. Serve the hot tomato soup with the grilled cheese sandwiches cut in half.

  • For a spicier version, add red pepper flakes to the soup.
  • Use fresh basil for a more vibrant flavor.
