Ingredients

- 4 slices of bread
- 1 cup shredded cabbage
- 1 carrot, grated
- 1/2 cup peanut sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons butter
Instructions
- In a bowl, mix the shredded cabbage, grated carrot, and peanut sauce until well combined.
- Spread butter on one side of each slice of bread.
- On the unbuttered side of two slices, layer the cheese and then top with the Thai peanut slaw mixture.
- Place the other two slices of bread on top, buttered side up.
- Heat a skillet over medium heat and grill the sandwiches until golden brown, about 3-4 minutes per side.
- Remove from heat, slice, and serve warm.
Notes
- Feel free to add protein like grilled chicken or tofu for extra heartiness.
- Adjust the amount of peanut sauce to taste.
- For a spicier kick, add sliced jalapeños to the slaw.
