Delicious Thai Peanut Chicken Wraps that are perfect for a quick and satisfying lunch.

			- 2 cups cooked chicken, shredded
 - 1/2 cup peanut butter
 - 1/4 cup soy sauce
 - 1 tablespoon honey
 - 1 tablespoon lime juice
 - 1/2 teaspoon garlic powder
 - 1/2 teaspoon ginger, grated
 - 4 large tortillas
 - 1 cup shredded carrots
 - 1 cup sliced bell peppers
 - 1 cup cucumber, sliced
 - 1/4 cup chopped cilantro
 
Instructions
- In a bowl, mix together peanut butter, soy sauce, honey, lime juice, garlic powder, and ginger until smooth.
 - Spread a generous amount of the peanut sauce on each tortilla.
 - Layer the shredded chicken, carrots, bell peppers, cucumber, and cilantro on top of the sauce.
 - Wrap the tortillas tightly, folding in the sides as you roll.
 - Slice the wraps in half and serve with extra peanut sauce if desired.
 
Notes
- These wraps can be made ahead of time and stored in the refrigerator.
 - Feel free to add other vegetables like avocado or sprouts for extra crunch.
 - For a spicier kick, add some sriracha to the peanut sauce.
