- 2 cups cooked chicken, shredded
- 1/2 cup Thai peanut sauce
- 4 large tortillas
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 1 cup cucumber, sliced
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
Instructions
- In a bowl, mix the shredded chicken with the Thai peanut sauce until well coated.
- Lay out the tortillas on a flat surface.
- Evenly distribute the chicken mixture onto each tortilla.
- Add shredded carrots, sliced bell peppers, cucumber, cilantro, and chopped peanuts on top of the chicken.
- Fold the sides of the tortilla in and then roll it up tightly from the bottom.
- Slice the wraps in half and serve immediately or wrap in foil for later.
Notes
- For a vegetarian option, substitute chicken with tofu.
- Feel free to add other vegetables like avocado or spinach.
- Store any leftover peanut sauce in the refrigerator for up to a week.
