Thai Chicken Satay Skewers are a delicious and flavorful dish made with marinated chicken grilled to perfection and served with a rich peanut sauce.

- 1 lb chicken breast, cut into strips
- 1/4 cup coconut milk
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp curry powder
- 1 tbsp lime juice
- 1 clove garlic, minced
- 1/4 cup peanut butter
- 1/4 cup water
- 1 tbsp honey
- 1 tsp chili paste (optional)
- Skewers (soaked in water if wooden)
Instructions
- In a bowl, mix coconut milk, soy sauce, brown sugar, curry powder, lime juice, and garlic to create the marinade.
- Add chicken strips to the marinade and let it sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the skewers for about 5-7 minutes on each side or until fully cooked.
- In a separate bowl, mix peanut butter, water, honey, and chili paste to make the peanut sauce.
- Serve the chicken skewers with the peanut sauce on the side.
Notes
- For extra flavor, marinate the chicken overnight.
- Adjust the spiciness of the peanut sauce by adding more or less chili paste.
- Serve with fresh vegetables or rice for a complete meal.
