  • 2 tbsp soy sauce
  • 2 tbsp brown sugar

  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • 1/4 cup peanut butter
  • 1/4 cup water
  • 1 tbsp honey
  • 1 tsp chili paste (optional)
  • Skewers (soaked in water if wooden)

Instructions

  1. In a bowl, mix coconut milk, soy sauce, brown sugar, curry powder, lime juice, and garlic to create the marinade.
  2. Add chicken strips to the marinade and let it sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken onto skewers.
  5. Grill the skewers for about 5-7 minutes on each side or until fully cooked.
  6. In a separate bowl, mix peanut butter, water, honey, and chili paste to make the peanut sauce.
  7. Serve the chicken skewers with the peanut sauce on the side.
