- 2 tbsp vegetable oil
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1/2 cup green onions, chopped
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp lime juice
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- Chopped peanuts and cilantro for garnish
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large skillet, heat vegetable oil over medium heat and add the sliced chicken. Cook until browned and cooked through.
- Add the bell peppers and carrots to the skillet, cooking until they are tender.
- In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, and ginger until smooth.
- Add the cooked noodles to the skillet, then pour the peanut sauce over the top. Toss everything together until well combined.
- Garnish with chopped green onions, peanuts, and cilantro before serving.
