- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon lime juice
- 1 teaspoon Thai red curry paste
- Salt and pepper to taste
- 1 can (14 oz) coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- Fresh cilantro, for garnish
- Jasmine rice or noodles, for serving
Instructions
- Prepare the meatball mixture: In a large mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, lime juice, curry paste, salt, and pepper. Mix gently and form into small meatballs.
- Brown the meatballs: Heat a large skillet over medium heat, add oil, and brown the meatballs for about 8–10 minutes.
- Create the coconut curry sauce: Add coconut milk, fish sauce, and another tablespoon of lime juice to the skillet. Stir and bring to a gentle simmer.
- Simmer the meatballs: Return the meatballs to the skillet and let them simmer in the sauce for 10–15 minutes.
- Serve and garnish: Scoop meatballs and sauce over jasmine rice or noodles and finish with fresh cilantro.
Notes
Make the meatballs ahead of time and store them to enhance flavors. For a healthier option, bake the meatballs or use an air fryer.
