Ingredients

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon lime juice
  • 1 teaspoon Thai red curry paste
  • Salt and pepper to taste
  • 1 can (14 oz) coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish
  • Jasmine rice or noodles, for serving

Instructions

  1. Prepare the meatball mixture: In a large mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, ginger, lime juice, curry paste, salt, and pepper. Mix gently and form into small meatballs.
  2. Brown the meatballs: Heat a large skillet over medium heat, add oil, and brown the meatballs for about 8–10 minutes.
  3. Create the coconut curry sauce: Add coconut milk, fish sauce, and another tablespoon of lime juice to the skillet. Stir and bring to a gentle simmer.
  4. Simmer the meatballs: Return the meatballs to the skillet and let them simmer in the sauce for 10–15 minutes.
  5. Serve and garnish: Scoop meatballs and sauce over jasmine rice or noodles and finish with fresh cilantro.

Notes

Make the meatballs ahead of time and store them to enhance flavors. For a healthier option, bake the meatballs or use an air fryer.
