Ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup pineapple chunks, fresh or canned
  • 1/4 cup teriyaki sauce
  • 1/2 cup cooked rice (optional)
  • 1 tablespoon olive oil

  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. Combine the shredded chicken, pineapple chunks, teriyaki sauce, and cooked rice in a mixing bowl.
  4. Season the mixture with salt and pepper to taste.
  5. Stuff the bell peppers with the chicken mixture, packing it in.
  6. Place the stuffed peppers in a baking dish and drizzle with olive oil.
  7. Cover the dish with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for another 10 minutes until the peppers are tender.
  9. Garnish with chopped green onions before serving.
