  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks
  • 1/2 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and add the diced chicken.
  4. Cook the chicken until browned, then add garlic powder, ginger powder, salt, and pepper.
  5. Stir in the pineapple chunks and teriyaki sauce, cooking for an additional 2-3 minutes.
  6. In a large bowl, combine the cooked rice with the chicken and pineapple mixture.
  7. Stuff each bell pepper with the rice and chicken mixture.
  8. Place the stuffed peppers in a baking dish and cover with foil.
  9. Bake for 25-30 minutes, until the peppers are tender.
  10. Garnish with chopped green onions before serving.
