- 12 jumbo pasta shells
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1/2 cup sour cream
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
- In a skillet, brown the ground beef or turkey over medium heat. Drain excess fat.
- Add the taco seasoning, salsa, black beans, and corn to the meat. Stir to combine and cook for 5 minutes.
- Stuff each cooked pasta shell with the taco meat mixture.
- Place the stuffed shells in a baking dish and top with shredded cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Serve with sour cream and garnish with fresh cilantro if desired.

- Feel free to customize the filling with your favorite taco ingredients.
- These can be made ahead of time and stored in the refrigerator before baking.
