- 1 lb ground beef (or ground turkey)
- 1 cup rice (white or brown)
- 1 cup water or broth
- 1 taco seasoning packet
- 1 cup black beans (canned, drained)
- 1 cup corn (canned or frozen)
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 cup chopped lettuce
- 1/2 cup diced onions
- Sour cream and hot sauce for topping (optional)
Instructions
- In a medium saucepan, bring water or broth to a gentle boil, add the rice, and cover it. Reduce the heat and let it simmer according to package instructions.
- While the rice cooks, heat your non-stick skillet over medium heat. Add the ground beef (or turkey) and cook until browned, stirring frequently and breaking apart any clumps. Drain any excess fat.
- Sprinkle the taco seasoning packet over the cooked meat. Add a little water according to the packet instructions, mixing well until the meat is evenly coated.
- Stir in the black beans, corn, and diced tomatoes. Allow everything to heat through, stirring occasionally.
- In individual serving bowls, start with a generous scoop of fluffy rice. Top it with the flavorful meat and veggie mixture, then sprinkle with shredded cheese, crisp lettuce, and diced onions. Add sour cream or hot sauce if desired.
