A delightful mix of sweet pineapple and spicy red pepper flakes, transforming fresh fruit into a candy that balances sweetness and heat.


Ingredients

  • 1 medium fresh pineapple, peeled, cored, and diced (about 4 cups)
  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 teaspoons red pepper flakes
  • 1/2 teaspoon ground ginger
  • Fresh mint leaves, chopped (optional)

Instructions

  1. Combine the diced pineapple and granulated sugar in a large mixing bowl. Let it sit for about an hour.
  2. Transfer the mixture into a heavy-bottomed saucepan. Pour in the apple cider vinegar, red pepper flakes, and ground ginger. Stir gently.
  3. Heat over medium heat, stirring occasionally, until the mixture thickens (about 30 to 40 minutes).
  4. Remove from heat and allow it to cool to room temperature.
  5. Pour the cooled candy into clean jars and refrigerate. Garnish with fresh mint leaves before serving.

Notes

This candy tastes even better after a couple of days in the fridge. Use an Instant Pot for quicker preparation.
