- 1 medium fresh pineapple, peeled, cored, and diced (about 4 cups)
- 1 1/2 cups granulated sugar
- 3/4 cup apple cider vinegar
- 1 1/2 teaspoons red pepper flakes
- 1/2 teaspoon ground ginger
- Fresh mint leaves, chopped (optional)
Instructions
- Combine the diced pineapple and granulated sugar in a large mixing bowl. Let it sit for about an hour.
- Transfer the mixture into a heavy-bottomed saucepan. Pour in the apple cider vinegar, red pepper flakes, and ground ginger. Stir gently.
- Heat over medium heat, stirring occasionally, until the mixture thickens (about 30 to 40 minutes).
- Remove from heat and allow it to cool to room temperature.
- Pour the cooled candy into clean jars and refrigerate. Garnish with fresh mint leaves before serving.
Notes
This candy tastes even better after a couple of days in the fridge. Use an Instant Pot for quicker preparation.
