- For the Risotto:
- 1 cup Arborio rice
- 4 cups vegetable broth
- 1 medium sweet potato, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- In a medium saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced sweet potato, cooking for an additional 5 minutes until the sweet potato begins to soften.
- Stir in the Arborio rice, allowing it to toast for 1-2 minutes until slightly translucent.
- Pour in the white wine and stir until it is mostly absorbed.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. This process should take about 20-25 minutes.
- Once the rice is creamy and al dente, stir in the grated Parmesan cheese and fresh thyme. Season with salt and pepper to taste.
- Remove from heat and let it sit for a couple of minutes before serving.
Notes
- This risotto can be made ahead of time and reheated gently on the stove with a splash of broth.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a vegan option, substitute Parmesan with nutritional yeast and use vegetable broth without added dairy.
