  • For the Risotto:
    • 1 cup Arborio rice
    • 4 cups vegetable broth
    • 1 medium sweet potato, peeled and diced
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1/2 cup dry white wine
    • 1/2 cup grated Parmesan cheese
    • 2 tablespoons olive oil
    • 1 tablespoon fresh thyme leaves
    • Salt and pepper to taste

Instructions

  1. In a medium saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced sweet potato, cooking for an additional 5 minutes until the sweet potato begins to soften.
  4. Stir in the Arborio rice, allowing it to toast for 1-2 minutes until slightly translucent.
  5. Pour in the white wine and stir until it is mostly absorbed.
  6. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. This process should take about 20-25 minutes.
  7. Once the rice is creamy and al dente, stir in the grated Parmesan cheese and fresh thyme. Season with salt and pepper to taste.
  8. Remove from heat and let it sit for a couple of minutes before serving.

Notes

  • This risotto can be made ahead of time and reheated gently on the stove with a splash of broth.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a vegan option, substitute Parmesan with nutritional yeast and use vegetable broth without added dairy.
