  • 1 pound ground meat (beef, lamb, or turkey)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup vegetable broth
  • 1/4 cup milk (or dairy-free alternative)
  • 2 tablespoons butter (or dairy-free alternative)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes, then boil them in salted water until tender.
  3. In a large skillet, heat olive oil over medium heat and sauté the onion, carrots, and celery until softened.
  4. Add garlic and cook for another minute.
  5. Stir in the ground meat and cook until browned.
  6. Add tomato paste, thyme, rosemary, salt, pepper, and vegetable broth. Simmer for 5-10 minutes.
  7. Drain the sweet potatoes and mash them with milk and butter until smooth.
  8. Spread the meat mixture in a baking dish and top with the sweet potato mash.
