- 2 cups mashed sweet potatoes
- 4 cups all-purpose flour
- 1/4 cup sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 cup warm milk
- 1/4 cup unsalted butter, melted
- 1 tsp salt
- 2 large eggs
Instructions
- In a bowl, combine warm milk and yeast; let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine mashed sweet potatoes, sugar, melted butter, and salt.
- Add the yeast mixture and eggs to the sweet potato mixture; mix well.
- Gradually add flour, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
- Punch down the dough and divide it into small balls.
- Arrange the balls in a greased baking dish, cover, and let them rise for another 30 minutes.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- For a sweeter flavor, add more sugar to the dough.
- These rolls can be frozen after baking; reheat before serving.
- Serve with butter or your favorite spread.
