Ingredients

  • Sweet Potatoes: 2 large, peeled and thinly sliced
  • Pears: 2 ripe, peeled and thinly sliced
  • Heavy Cream: 1 cup
  • Thyme: 2 tablespoons, fresh and chopped
  • Garlic: 2 cloves, minced
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Parmesan Cheese: 1 cup, grated
  • Butter: 2 tablespoons, for greasing the baking dish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13 inch baking dish with butter.
  3. In a large bowl, combine the sweet potatoes, pears, garlic, thyme, salt, and pepper.
  4. Layer half of the sweet potato and pear mixture in the bottom of the prepared baking dish.
  5. Pour half of the heavy cream over the first layer.
  6. Sprinkle half of the Parmesan cheese on top.
  7. Repeat the layering process with the remaining sweet potato and pear mixture, cream, and cheese.
  8. Cover the dish with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the sweet potatoes are tender.
