- 2 medium sweet potatoes, peeled and diced
- 1 cup red lentils, rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can coconut milk (400ml)
- 2 cups vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat and sauté the onion until translucent.
- Add the garlic and ginger, cooking for another minute until fragrant.
- Stir in the curry powder and turmeric, cooking for 30 seconds.
- Add the diced sweet potatoes and lentils, mixing well.
- Pour in the coconut milk and vegetable broth, bringing the mixture to a boil.
- Reduce heat and let it simmer for about 20-25 minutes, or until the sweet potatoes and lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.

- This curry can be served with rice or naan for a complete meal.
- Feel free to add other vegetables like spinach or bell peppers for extra nutrition.
