  • 2 medium sweet potatoes, peeled and diced
  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can coconut milk (400ml)
  • 2 cups vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onion until translucent.
  2. Add the garlic and ginger, cooking for another minute until fragrant.
  3. Stir in the curry powder and turmeric, cooking for 30 seconds.
  4. Add the diced sweet potatoes and lentils, mixing well.
  5. Pour in the coconut milk and vegetable broth, bringing the mixture to a boil.
  6. Reduce heat and let it simmer for about 20-25 minutes, or until the sweet potatoes and lentils are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.
