Ingredients

- 2 slices of bread
- 1 medium sweet potato, cooked and mashed
- 1/2 cup fontina cheese, shredded
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Spread the mashed sweet potato on one slice of bread.
- Sprinkle the shredded fontina cheese over the sweet potato.
- Top with the second slice of bread.
- Heat a skillet over medium heat and add 1 tablespoon of butter.
- Place the sandwich in the skillet and cook until golden brown, about 3-4 minutes.
- Flip the sandwich, add the remaining butter, and cook until the other side is golden and the cheese is melted.
Notes
- For extra flavor, add herbs like thyme or rosemary to the sweet potato.
- Use whole grain or sourdough bread for a different taste.
- Serve with a side of soup for a complete meal.
