- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced

- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 eggs (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally.
- Add bell pepper, onion, and garlic; cook until vegetables are tender.
- Stir in paprika, cumin, salt, and pepper; cook for another 2-3 minutes.
- If using, create small wells in the hash and crack an egg into each well. Cover and cook until eggs are set.
- Serve hot and enjoy!
