- 2 medium sweet potatoes
- 1 cup mini marshmallows
- 2 tablespoons butter
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into bite-sized pieces.
- Boil the sweet potato pieces in a pot of water until tender, about 15-20 minutes.
- Drain the sweet potatoes and return them to the pot.
- Add butter, brown sugar, cinnamon, nutmeg, and salt to the sweet potatoes and mash until smooth.
- Transfer the mashed sweet potatoes to a baking dish and spread evenly.
- Top with mini marshmallows.
- Bake in the preheated oven for 10-15 minutes, or until the marshmallows are golden brown.
- Remove from the oven and let cool slightly before serving.
