Description

This Sweet Potato, Apple & Walnut Gratin is a delightful blend of creamy textures and sweet, earthy flavors. The tender sweet potatoes meld beautifully with tart apples, while the crunchy walnuts add a satisfying contrast, all enveloped in a rich, cheesy sauce that is golden and bubbling.

  • Vegetables:
    • 2 large sweet potatoes, peeled and thinly sliced
    • 2 medium apples, cored and thinly sliced (preferably Granny Smith)
  • Cheese:
    • 1 cup shredded Gruyère cheese
    • 1/2 cup grated Parmesan cheese
  • Other:
    • 1 cup heavy cream
    • 1/2 cup milk
    • 1/2 cup chopped walnuts
    • 2 tablespoons unsalted butter
    • 1 teaspoon fresh thyme leaves
    • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the heavy cream, milk, thyme, salt, and pepper.
  3. In a greased 9×13 inch baking dish, layer half of the sweet potato slices evenly on the bottom.
  4. Top with half of the apple slices, followed by half of the Gruyère cheese and half of the walnuts.
  5. Pour half of the cream mixture over the layered ingredients.
  6. Repeat the layering process with the remaining sweet potatoes, apples, Gruyère, walnuts, and cream mixture.
  7. Sprinkle the grated Parmesan cheese on top and dot with butter.
  8. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

Notes

  • This dish can be prepared a day in advance; simply cover and refrigerate before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute half-and-half for the heavy cream.
