This Sweet Potato, Apple & Walnut Gratin is a delightful blend of creamy textures and sweet, earthy flavors. The tender sweet potatoes meld beautifully with tart apples, while the crunchy walnuts add a satisfying contrast, all enveloped in a rich, cheesy sauce that is golden and bubbling.

- Vegetables:
- 2 large sweet potatoes, peeled and thinly sliced
- 2 medium apples, cored and thinly sliced (preferably Granny Smith)
- Cheese:
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Other:
- 1 cup heavy cream
- 1/2 cup milk
- 1/2 cup chopped walnuts
- 2 tablespoons unsalted butter
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the heavy cream, milk, thyme, salt, and pepper.
- In a greased 9×13 inch baking dish, layer half of the sweet potato slices evenly on the bottom.
- Top with half of the apple slices, followed by half of the Gruyère cheese and half of the walnuts.
- Pour half of the cream mixture over the layered ingredients.
- Repeat the layering process with the remaining sweet potatoes, apples, Gruyère, walnuts, and cream mixture.
- Sprinkle the grated Parmesan cheese on top and dot with butter.
- Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
Notes
- This dish can be prepared a day in advance; simply cover and refrigerate before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a lighter version, substitute half-and-half for the heavy cream.
