A creamy and comforting bisque made with sweet potatoes and apples, perfect for chilly days.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 apples, peeled, cored, and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the diced sweet potatoes and chopped apples to the pot, stirring to combine.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the sweet potatoes are tender, about 20 minutes.
  4. Using an immersion blender, puree the mixture until smooth. Alternatively, transfer to a blender in batches.
  5. Stir in the coconut milk and ground cinnamon. Season with salt and pepper to taste.
  6. Heat through and serve warm, garnished with a sprinkle of cinnamon if desired.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
  • This bisque can be made ahead of time and stored in the refrigerator for up to 3 days.
