A creamy and comforting bisque made with sweet potatoes and apples, perfect for chilly days.
Ingredients

- 2 medium sweet potatoes, peeled and diced
- 2 apples, peeled, cored, and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the diced sweet potatoes and chopped apples to the pot, stirring to combine.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the sweet potatoes are tender, about 20 minutes.
- Using an immersion blender, puree the mixture until smooth. Alternatively, transfer to a blender in batches.
- Stir in the coconut milk and ground cinnamon. Season with salt and pepper to taste.
- Heat through and serve warm, garnished with a sprinkle of cinnamon if desired.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- This bisque can be made ahead of time and stored in the refrigerator for up to 3 days.
- Freeze leftovers in an airtight container for up to 3 months.
