A delicious and easy-to-make Sweet Chili Chicken Stir-Fry that combines tender chicken with vibrant vegetables and a sweet and spicy sauce.

- 1 lb chicken breast, sliced
- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 1/2 cup onion, sliced
- 3 cloves garlic, minced
- 1/4 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
- Add the garlic and onion, and sauté for 2 minutes until fragrant.
- Add the bell peppers and broccoli, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Pour in the sweet chili sauce and soy sauce, stirring to coat the chicken and vegetables evenly.
- Season with salt and pepper to taste, and cook for an additional 2 minutes.
- Serve hot over rice or noodles.
Notes
- Feel free to add other vegetables like snap peas or carrots.
- Adjust the sweetness by adding more or less sweet chili sauce.
- This dish can be made ahead of time and reheated for quick meals.
