Ingredients

  • 1 medium cucumber (English preferred)
  • 1 cup cherry tomatoes (or grape tomatoes)
  • 1/2 medium red onion (or green onions)
  • 1 cup feta cheese (or goat cheese)
  • 1/4 cup cilantro (optional)
  • 1/3 cup mayonnaise (or Greek yogurt)
  • 1/3 cup sour cream (or Greek yogurt)
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Prepare the corn: Remove kernels from cobs or drain canned corn.
  2. Chop the vegetables: Dice cucumber, slice tomatoes, and chop onion.
  3. Mix the dressing: Combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
  4. Combine ingredients: In a large bowl, mix corn, cucumber, tomatoes, onion, feta, and cilantro. Pour dressing over and fold gently.
  5. Taste and adjust seasoning as needed.
  6. Chill and serve: Refrigerate for at least 30 minutes before serving.

Notes

Make ahead and store in the refrigerator for up to two days. Grilled corn can be used for a smoky flavor.
