Ingredients

- 2 cups fresh corn kernels (or canned corn)
- 1 medium cucumber (English preferred)
- 1 cup cherry tomatoes (or grape tomatoes)
- 1/2 medium red onion (or green onions)
- 1 cup feta cheese (or goat cheese)
- 1/4 cup cilantro (optional)
- 1/3 cup mayonnaise (or Greek yogurt)
- 1/3 cup sour cream (or Greek yogurt)
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Prepare the corn: Remove kernels from cobs or drain canned corn.
- Chop the vegetables: Dice cucumber, slice tomatoes, and chop onion.
- Mix the dressing: Combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
- Combine ingredients: In a large bowl, mix corn, cucumber, tomatoes, onion, feta, and cilantro. Pour dressing over and fold gently.
- Taste and adjust seasoning as needed.
- Chill and serve: Refrigerate for at least 30 minutes before serving.
Notes
Make ahead and store in the refrigerator for up to two days. Grilled corn can be used for a smoky flavor.
