Ingredients

  • 2 cups shredded chicken
  • 2 celery stalks, chopped into 1/4 inch pieces
  • 1 green onion, chopped thin
  • 56 large strawberries, diced
  • ⅓ cup chopped pecans
  • ¼ cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • ½ teaspoon pepper, salt to taste

Instructions

  1. Cut and chop ingredients accordingly. Start by shredding your chicken, then chop the celery and green onions. Dice the strawberries last.
  2. Add all the ingredients except the strawberries to a mixing bowl. Combine shredded chicken, celery, green onion, pecans, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, poppy seeds, and pepper. Stir until well coated.
  3. Fold in the strawberries gently. Alternatively, wait to add them just before serving if chilling the salad.
  4. Serve immediately or chill for 10-20 minutes before serving.

Notes

For a more flavorful salad, prepare it a few hours in advance and let it chill. Customize with different fruits or nuts to suit your taste.
