- 2 cups shredded chicken
- 2 celery stalks, chopped into 1/4 inch pieces
- 1 green onion, chopped thin
- 5–6 large strawberries, diced
- ⅓ cup chopped pecans
- ¼ cup mayonnaise
- 2 tablespoons plain Greek yogurt
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon poppy seeds
- ½ teaspoon pepper, salt to taste
Instructions
- Cut and chop ingredients accordingly. Start by shredding your chicken, then chop the celery and green onions. Dice the strawberries last.
- Add all the ingredients except the strawberries to a mixing bowl. Combine shredded chicken, celery, green onion, pecans, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, poppy seeds, and pepper. Stir until well coated.
- Fold in the strawberries gently. Alternatively, wait to add them just before serving if chilling the salad.
- Serve immediately or chill for 10-20 minutes before serving.
Notes
For a more flavorful salad, prepare it a few hours in advance and let it chill. Customize with different fruits or nuts to suit your taste.
