- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 1 cup fresh strawberries, chopped
- 1/2 cup whipped cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a greased mini muffin tin to form the crust.
- Bake for 5-7 minutes until lightly golden, then let cool.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- Add lemon juice and lemon zest, mixing until well combined.
- Fold in the chopped strawberries and whipped cream gently.
- Fill each crust with the cheesecake mixture and smooth the tops.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These bites can be topped with additional strawberries or a drizzle of lemon glaze.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
