Description

Delicious meatballs made with spinach and garlic, stuffed with gooey mozzarella cheese.


Ingredients

  • 1 lb ground beef
  • 1 cup fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup mozzarella cheese, cubed
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, pepper, and parsley.
  3. Mix until well combined.
  4. Take a small amount of the mixture and flatten it in your palm.
  5. Place a cube of mozzarella in the center and wrap the meat around it, forming a ball.
  6. Repeat with the remaining mixture.
  7. Place the meatballs on a baking sheet lined with parchment paper.
  8. Bake for 25-30 minutes or until cooked through.

Notes

  • For a spicier kick, add red pepper flakes to the meat mixture.
  • These meatballs can be served with marinara sauce for dipping.
  • Leftovers can be stored in the refrigerator for up to 3 days.
