- Noodles: 200g ramen noodles
- Beef: 300g thinly sliced beef (ribeye or sirloin)
- Marinade:
- 2 tbsp soy sauce
- 1 tbsp gochujang (Korean chili paste)
- 1 tbsp sesame oil
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Broth:
- 4 cups beef broth
- 1 tbsp soy sauce
- 1 tbsp miso paste
- 1 tsp gochugaru (Korean red pepper flakes)
- 1 green onion, chopped
- Toppings:
- 2 soft-boiled eggs
- 1 cup bean sprouts
- 1 sheet nori, cut into strips
- Fresh cilantro, for garnish
Instructions
- In a bowl, combine all marinade ingredients and add the sliced beef. Let it marinate for at least 30 minutes.
- In a large pot, bring the beef broth to a simmer over medium heat. Stir in soy sauce, miso paste, and gochugaru.
- While the broth simmers, cook the ramen noodles according to package instructions until al dente, then drain and set aside.
- In a skillet over medium-high heat, add the marinated beef and cook for 3-4 minutes until browned and cooked through.
- Once the broth is simmering, add the cooked noodles and green onions, and let it heat through for about 2 minutes.
- To serve, divide the noodles and broth into bowls, top with beef, soft-boiled eggs, bean sprouts, nori, and cilantro.
Notes
- This dish can be made ahead by marinating the beef and preparing the broth in advance. Store separately in the refrigerator for up to 2 days.
- Leftover broth can be stored in an airtight container for up to 5 days.
- For a vegetarian option, substitute beef with tofu and use vegetable broth.
